I hate to say it, but I wasn’t really looking forward to Meatless Monday when I started the 2015 Foodie Challenge. But it’s all about new experiences and learning new things, so I figured I’d give it a shot.
Then I remembered there are so many delicious dishes that don’t contain meat!
Lots of people choose to observe Meatless Monday for many different reasons, whether political, health, or financial. I’m not here to judge or make a statement — this is purely an experiment to broaden my taste horizons.
So here’s the plan: each Monday in February, I’ll post two recipes (breakfast and dinner) that I’ll be making. Lunch will consist of leftovers from dinner. Instead of trying to make meals that “fake” the experience of eating meat, I’ll go for innovative, delicious recipes that exploit the unique flavors and textures of meals made with an assortment of vegetables, grains, dairy, and eggs.*

*Since I’m not well-versed on the strict definitions of vegetarianism and veganism, I’ll only say that these recipes won’t contain meat (fish, poultry, pork, beef, etc.) They won’t necessarily be considered vegan or vegetarian in the strict sense of the word(s).
